While most Japanese green teas are steamed, houjicha (HOH-jee-cha) is roasted over charcoal, transforming both flavor and character. The roasting reduces caffeine content significantly - about one-third that of regular green tea - making this suitable for evening drinking or for people sensitive to caffeine. It's the tea Japanese families give to children and elderly people.
The flavor is nothing like conventional green tea. Instead of grassy vegetal notes, you get toasted brown rice, warm bread, caramel, and slight smokiness. It's earthy and comforting, with zero bitterness or astringency. The color is amber-brown rather than green.
